Gluten free cookies

After starting my diet plan I ordered some gluten free cookies from Amazon. Their taste was ok, but I don’t like the choice of ingredients. So thought of baking some gluten free cookies at home.

Here is my version of gluten free cookies sweetened with jaggery, made with love and yes approved by all family members eldest and the youngest!

Ingredients

  • 190gm Oats Flour
  • 90gm Almonds flour
  • 30gms milk powder
  • 1/2 tsp Cream of tartar
  • 1/4tsp baking soda
  • 50gm gram flour
  • 1/2 tbsp cardamom powder
  • Two pinch salt
  • 200gms jaggery ( take less or more 240 gms as per your sweetness requirements )
  • 150gms Ghee ( clarified butter ) It can be reduced to 120gms too.

Tip – 1/2 cup desiccated coconut ( I have made half mix with coconut flavour by adding 1/2 cup coconut in half the mixture, take out two tbsp for coating before bake )

-Add some small pieces of jaggery too it tastes really nice in cookies, it doesn’t melt while baking!

Procedure

  • Shift all the dry ingredients ( Oats Flour, almonds flour, milk powder, Cream of tartar, baking soda, salt, gram flour) in a bowl and mix properly.
  • In another bowl add clarified butter ( Ghee ) and grated jaggery.
  • Now whisk ghee and jaggery to make it fluffy and creamy.
  • Add and mix dry ingredients to the wet ingredients in parts. ( Do not add all in a go ).
  • Make small balls from your dough and keep in baking tray.
  • Now keep it in fridge for 10 minutes, meanwhile pre-heat your oven 170c. ( You can store your dough in Fridge if you don’t want to bake at the same time )
  • Bake your cookies for 12min on 170C ( Keep an eye as temperature settings may be different in all oven )
  • Take our the cookies and let them cool on rack, do not touch until they are cool as they are super soft at this stage.
  • Once properly cooler store them in aur tight container.
  • Enjoy healthy cookies!

Here is whole wheat base pizza recipe – Making Junk Food Healthy!

So let’s enjoy every bite of pizza along with the healthy veggies!
I am a big foodie, I always try something healthy, so that I can eat as much as I want w/o any guilt of eating unhealthy?

Sharing wholewheat base pizza with lots of veggies. Enjoy eating as much as you want ? Both Mommy & Child happy!

INGREDIENTS:

Pizza sauce

  • 4 big tomatoes
  • 1 onion
  • 4-5 garlic cloves
  • Oregano
  • Chili flakes
  • Sugar if tomatoes are not sweet
  • 1 tbsp olive oil
  • 2 tsp tomato sauce and salt as per taste

Procedure

  • Boil and peel tomatoes – take 2 whistles in cooker on high flame.
  • Let it cool n blend it.
  • Then add garlic n onion puree to olive oil in a pan and fry, add tomato puree now and add oregano chili flakes let the sauce thicken add tomato sauce and salt n sugar.
  • Sauce is ready

Pizza base

  • 1 1/2 cups wholewheat flour
  • 1/2 cup chiroti rava
  • 1 cup water plus milk 50 50 or use according to dough
  • 1 1/2 tsp active dry yeast
  • 1 1/2 tbsp oil
  • 1 tsp Sugar
  • Salt as per taste

Procedure

In half cup luke warm water add sugar and mix well now add yeast and mix and keep aside for 15min until frothy.

Take both flour and rawa/sooji in bowl add salt and mix well.

Make a hole in center add oil and now add frothy yeast mix well with spatula combining to form dough add water as needed until a sticky dough is formed leaving sides of the bowl.

Transfer the sticky dough to work surface and knead well using stretch and fold method until smooth dough is formed it will take around 15 minutes or less.

Now keep this dough in well oiled bowl and cover with cling and keep for raise until doubles it will take around 60 mins.

Meanwhile you can prepare pizza sauce and cut veggies.

  • Take out raise dough and punch out air
  • knead a little make balls of it and rolled out as pizza base thin crust or normal depends on you.
  • Take pizza pan and line it with parchment paper and spread rolled base use fork to put marks on base.
  • Spread pizza sause and one layer of mozzarella.
  • Add veggies of your choice…add more mozzarella generously ?.
  • Sprinkle oregano chilli flakes too if you want.
  • I added cheddar chesse and basil leaves too, keep it aside for another 30 minutes.
  • Preheat oven 180 now bake pizza for 25 min until brown …..serve hot and enjoye the delicious healthy pizza…??
